Elements Eatery is a vibrant, award-winning café located within the Yawa Aquatic Centre on the Mornington Peninsula. Founded and operated by hospitality expert Tracey Fleming, the café was created to redefine in-centre dining at aquatic and recreation centres by combining healthy food, sustainability, and community connection in a welcoming, inclusive space.

Challenge
The goal was to establish a sustainable, community-focused café that could thrive in a high-traffic recreational facility while meeting strict health, accessibility, and environmental standards.

Approach
Tracey applied her extensive hospitality experience and worked alongside Mornington Peninsula Shire and Belgravia Leisure to:

  • bring to life a destination café that aligned with the Healthy Eating Advisory Service’s guidelines, offering an 80% green-focused menu
  • embed sustainability through zero-waste practices, composting partnerships, and plastic-free accreditation
  • foster inclusion by ensuring the space and service were accessible to all, in line with Universal Design principles
  • build community through events like the “Think Pink” breakfast for breast cancer awareness and the “Community Connect” wellness series
  • collaborate with local suppliers to showcase Mornington Peninsula produce and support the regional economy
